250g softened butter
155g caster sugar
1 teaspoon vanilla bean paste
300g plain flour
35g cocoa powder
1 teaspoon baking powder
1/2 teaspoon bicarbonate soda
12 peppermint candy canes chopped coarsely
230g icing sugar mixture
30g Dutch cocoa powder
60ml boiling water
Method and Preparation
Preheat oven to 180°C. Place 2 trays with baking paper in a manner.
Mix the vanilla, butter and sugar with mixer till they turn pale and creamy. Now add baking powder, soda bicarbonate, cocoa powder and vanilla further to make the mixture.
Make small balls with the mixture and place on the tray in a suitable manner. Then gently flatten them with your hand palm.Bake them for 15 minutes in preheated oven. Take out of the oven and put aside to cool completely.
Combine the icing sugar and cocoa in a bowl to make the chocolate icing. Mix the water and disturb continuously to make the paste. Circulate icing over biscuits and sprinkle with chopped candy. Put aside for 30 minutes to set.
